Harissa is a spicy and wonderfully aromatic chile paste commonly used in North African and Middle Eastern cooking. Each Harissa recipe varies between locales, but typically consist of a common base of chile peppers, garlic, olive oil and spices, such as cumin, coriander, caraway and mint.
